Sherwood Estate’s Olive Oil is grown alongside grapes on the Stirling Vineyard on the north side of the Waipara River.
The olive harvest begins in May/June and lasts about four weeks. The fruit is crushed and pressed within 24 hours of picking to ensure the highest quality oil.
Green and black olives are harvested together due to different varieties growing on the block and these are blended to produce a full spectrum of flavours.
Fresh grassy characters emerge from the green olives and soft butter characters from the black fruit.
The finished oil is typically bottled within 6 months of harvest.
